These Parmesan and Honey Cookies are a unique blend of savory and sweet. Sharp, salty Parmesan cheese brings a rich, umami depth to the cookie dough, while honey adds a warm, delicate sweetness. The result is a refined, slightly crisp cookie that pairs beautifully with wine, cheese boards, or a sophisticated afternoon tea.
Ingredients
For the Cookies:
- 1 ¾ cups (210g) all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup (115g) unsalted butter, softened
- ½ cup (50g) finely grated Parmesan cheese
- ¼ cup (85g) honey or golden syrup
- ¼ cup (50g) granulated sugar
- 1 large egg yolk
- ½ tsp vanilla extract (optional)
Optional for Finishing:
- Flaky sea salt or a light honey drizzle
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter, Parmesan, and sugar together until smooth and creamy.
- Add the honey (or golden syrup), egg yolk, and vanilla (if using), and mix until fully incorporated.
- Gradually stir in the dry ingredients using a spatula or wooden spoon. Mix until a soft dough forms.
- Wrap the dough in plastic wrap and chill for at least 1 hour to firm up the texture and enhance flavor.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing about 2 inches apart. Flatten gently with your fingers or a fork.
- Bake for 10–12 minutes or until the edges are lightly golden. The centers will remain pale and soft.
- Optional: While still warm, lightly sprinkle with flaky sea salt or drizzle with a touch of honey for extra flavor.
- Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack.
Tips for Success
- Use high-quality Parmesan (Parmigiano-Reggiano if possible) for the richest flavor.
- Golden syrup can be used in place of honey for a deeper caramel note.
- Serve these cookies with sharp cheeses, fruit, or herbal tea for a gourmet experience.
