These Parmesan and Honey Cookies are a unique blend of savory and sweet. Sharp, salty Parmesan cheese brings a rich, umami depth to the cookie dough, while honey adds a warm, delicate sweetness. The result is a refined, slightly crisp cookie that pairs beautifully with wine, cheese boards, or a sophisticated afternoon tea.

Ingredients

For the Cookies:

  • 1 ¾ cups (210g) all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ½ cup (50g) finely grated Parmesan cheese
  • ¼ cup (85g) honey or golden syrup
  • ¼ cup (50g) granulated sugar
  • 1 large egg yolk
  • ½ tsp vanilla extract (optional)

Optional for Finishing:

  • Flaky sea salt or a light honey drizzle

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large mixing bowl, cream the softened butter, Parmesan, and sugar together until smooth and creamy.
  3. Add the honey (or golden syrup), egg yolk, and vanilla (if using), and mix until fully incorporated.
  4. Gradually stir in the dry ingredients using a spatula or wooden spoon. Mix until a soft dough forms.
  5. Wrap the dough in plastic wrap and chill for at least 1 hour to firm up the texture and enhance flavor.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing about 2 inches apart. Flatten gently with your fingers or a fork.
  8. Bake for 10–12 minutes or until the edges are lightly golden. The centers will remain pale and soft.
  9. Optional: While still warm, lightly sprinkle with flaky sea salt or drizzle with a touch of honey for extra flavor.
  10. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack.

Tips for Success

  • Use high-quality Parmesan (Parmigiano-Reggiano if possible) for the richest flavor.
  • Golden syrup can be used in place of honey for a deeper caramel note.
  • Serve these cookies with sharp cheeses, fruit, or herbal tea for a gourmet experience.

Storage

Store in an airtight container at room temperature for up to 5 days. These cookies also freeze well for longer storage—just thaw and enjoy as needed.
