- 4 oz (115g) soft goat cheese
- 1 cup (200g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
Optional Glaze:
- 1 cup (120g) powdered sugar
- 2–3 tbsp milk
- ½ tsp dried lavender (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, salt, and chopped lavender. Set aside.
- In a large mixing bowl, cream the butter, goat cheese, and sugar together until light and fluffy.
- Beat in the egg and vanilla until smooth.
- Gradually add the dry ingredients, mixing until just combined. Do not overmix.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10–12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
- If using the glaze, whisk powdered sugar and milk together until smooth. Drizzle over cooled cookies and sprinkle with a touch of lavender for garnish.
